Normal people get excited for summer because water parks, beaches, warm nights, 4th of July, vacations, and parties.

I get excited because scones.

I am often asked for my scone recipe because they are so melt-in-your-mouth delicious. And the recipe is versatile - I used raspberries this particular time, but you can use strawberries, peaches, blueberries...whatever you want.

Summer Fresh Berry Scones

Here are the ingredients you will need to gather. Flour: 2 1/2 cups. Butter: 2/3 cup, cubed. Now, the very important key to this recipe is to keep the butter cold. Get it out of the fridge, measure and chop it up, and put it back in the fridge until the moment you need to mix it into the bowl. Baking powder: 4 teaspoons. Salt: 1/2 teaspoon. Sugar: 1/4 cup. Heavy cream: 1 1/4 cups. Chopped fresh berries: 1 generous cup.

Preheat your oven to 400. Sift the dry ingredients into a large mixing bowl.

Now you are ready to cut in your butter. Go ahead and get it out of the fridge and scrape the pieces into the bowl. Using a pastry blender, or a knife and fork if you don't have one, start cutting and mixing the butter into the flour until it looks like little pebbles. It should only take a few minutes.

Pour in the cream, a little at a time, moistening the flour with a fork until it is all gently incorporated. Fold in the fruit gently, being careful not to crush it or overmix the dough. It will be stiff. If there is a lot of flour at the bottom of the bowl, you can pour a few more drops of cream onto it to moisten it.

Place scoops of dough onto a cookie sheet. Bake 12-15 minutes until very lightly golden browned on top and the middles are cooked through. Do not overbake.

When they are done, you can let them sit for a couple minutes and then remove them to a wire cooling rack. Or you can be like me and immediately start eating them hot with butter melting on top (like there wasn't enough butter in them already).
